Portabella mushrooms with eggplant salad

Roasted eggplant and mushrooms
With balsamic vinaigrette, black pepper,olive oil and honey.
350 for 30 minutes,
Cool it down under 40 and mix with Bok choy,bell peppers,cherry tomatoes,purple cabbage,green onion,
Mild salsa,balsamic vinegar, blue cheese.
